I was never good at cooking, I would attempt to make a dish from scratch, take one bite and then toss it in the trash. When I first moved to California and I lived alone I became the queen of takeout; after a long day it was much easier to order from one of my favorite restaurants on Postmates or UberEats than to destroy my kitchen cooking something that would end up down the drain. When my boyfriend and I moved in together, I wanted to give cooking another try. I wanted to be able to prepare healthy food options for us to enjoy together. Both of us are pescatarians  which limits our options a bit, so I bought some new cookbooks for inspo and trolled Pinterest looking for recipes that we’d both enjoy. When Whole Foods opened up down the street from our apartment with their selection of quality foods, it gave me a whole new perspective on cooking and eating healthy. This time I did things differently than before and actually took my time when I was cooking and I finally started creating delicious meals that we both look forward to. I’m always searching for new dishes to create so I made a list of low-calorie vegetarian and vegan recipes that I will be making this fall. From breakfast, to dinner and in between, the meals I chose are healthy and more importantly they look insanely delicious!
